I continue to tinker with homebrew recipes. Currently I am making an organic apple-cranberry cider. I like making cider because one can buy pasteurized juice from the store and then just throw in some yeast and start fermenting (as opposed to measuring and boiling malt, hops, and water then cooling before adding yeast). Also, many local stores sell the cider in gallon glass jugs which you can use as a carboy, see below.
If you want a still (non-fizzy) cider the process is simple, add yeast to the juice, plug it with an airlock (see your local homebrew shop, they retail about 2$). It will be done in about 5 days (or when it stops bubbling). For carbonation, after your 5 day period add about 1oz of sugar per gallon, then bottle. I recommend Grolsch bottles for the intro brewer, or your favorite swingcap variety. Give it about two weeks in the bottles to carbonate then refrigerate to condition.
